Step 1
Meanwhile, preheat the oven to 375 degrees F (190 degrees C).

Place chipotle peppers, sugar, pineapple, nutmeg, ginger, and whiskey in a blender and process until smooth.

Use a sharp knife to make diagonal cuts in the ham in a diamond pattern, about 1 inch apart and 1/2 inch deep. Place ham in a large bowl. Pour marinade over ham and refrigerate, covered, turning ham occasionally, 3 to 6 hours.

Remove ham from marinade, reserving marinade. Place ham in a roasting pan. Roast in the preheated oven for 30 minutes.

Bring marinade to a boil in a saucepan over medium heat. Whisk cornstarch and water together in a small bowl until smooth. Whisk into marinade. Reduce heat to low and simmer until thick, about 5 minutes. Spoon marinade over ham.

Return ham to oven and continue baking until glaze bakes onto ham and an instant-read thermometer inserted into the thickest part of ham, not touching bone, reads at least 145 degrees F (65 degrees C), about 1 1/2 hours more. Baste ham with glaze every 30 minutes.
