Recipe Instructions

Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Cut off the very top of the garlic clove (about 1/4 inch) so that the tops of the cloves are slightly exposed. Coat with 1 tablespoon olive oil and wrap securely in foil.
Step 3
Roast the garlic in the preheated oven for 1 hour. Remove and let sit until cool enough to handle.
Step 4
Squeeze the soft, roasted garlic out of each clove into the bowl of a food processor or blender. Add chickpeas, remaining oil, water, tahini, lemon juice, salt, and cayenne; process until completely smooth.
