Step 1
Preheat the oven to 350 degrees F (175 degrees C).

Core the apples. Slice 2 apples and dice 1 apple. Scatter over an 8-inch pie dish.
Step 3
Mix cornstarch, lemon juice, and lemon zest into water. Keep stirring the mixture while pouring over the apples. Sprinkle cinnamon on top.

Stir flour and brown sugar together for topping. Cut in butter. Rub the butter into the mixture with your fingers to give a crumbly texture. Scatter it on top of the apples.

Bake in the preheated oven until apples are soft and topping is golden, 25 to 30 minutes. Serve warm or cold.
