Recipe Instructions

Step 1
Heat oil in a large skillet over medium heat. Cook and stir sausage in hot oil until crumbly and just slightly pink, about 5 minutes. Stir in potato and onion; continue cooking until potatoes are tender and lightly browned, 10 to 15 minutes.
Step 2
Stir in frozen vegetables and cook until heated through. Season with salt and pepper. Sprinkle with Cheddar cheese to serve.
