Elderberry Pie I

Keep an eye out for a farm stand offering elderberries and rush back home to make this amazing double-crust pie. The fresh berries are combined with seedless grapes, brown sugar, a bit of flour and cinnamon, and then the mixture is doused with vinegar before the whole thing is baked in a hot oven for 45 minutes.

Recipe Instructions

Step 1
Preheat the oven to 450 degrees F (230 degrees C).
Step 2
Combine the flour, sugar, and cinnamon; reserve 1/4 of this mixture. Add the remaining 3/4 flour mixture to the elderberries and grapes, and mix thoroughly. Sprinkle the reserved flour mixture evenly over the bottom of the crust in pie plate. Turn the filling into the crust, and dot with butter.
Step 3
Sprinkle the vinegar over the pie filling, and top with remaining crust.
Step 4
Bake for 10 minutes. Reduce the heat to 350 degrees F (175 degrees C). Bake for 35 to 40 minutes, or until golden brown.

  • 1 teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 1 recipe pastry for a 9 inch double crust pie
  • ½ cup packed light brown sugar
  • 3 cups elderberries
  • ¼ cup seedless grapes
  • 1 tablespoon cider vinegar
  • 2 tablespoons unsalted butter
