Fruit-Nut Gelatin Salad

I have made this many times. An old-fashioned molded gelatin salad with the unusual and tasty combination of orange gelatin, pineapple, cream cheese, pimento, celery, walnuts, etc. This particular recipe doesn't call for marshmallows, but you could always add some if you like.

Recipe Instructions

Step 1
In a medium saucepan, heat pineapple and juice over medium heat until boiling. Add gelatin and stir to dissolve. Remove from heat and refrigerate until partially set.
Step 2
In a small bowl, blend the pimento into the softened cream cheese. Mix the gelatin mixture and cream cheese together, and then fold in the whipped cream, nuts and celery. Pour into a 1 1/2 quart mold and chill until firm.

  • 1 cup chopped walnuts
  • 1 (3 ounce) package cream cheese, softened
  • 1 cup heavy cream, whipped
  • 1 cup diced celery
  • 1 (3 ounce) package orange flavored Jell-O®
  • 2 ½ cups crushed pineapple, with juice
  • 1 cup chopped pimento
