Combine cucumbers, water, salt, coriander seeds, mustard seeds, caraway seeds, chile peppers, garlic, allspice berries, and bay leaves in an airtight jar. Let sit for 2 days.

Ingredients

  • 2 leaf (blank)s bay leaves
  • 10 pounds pickling cucumbers
  • 10 quarts water
  • 2 ½ cups salt
  • ½ cup whole coriander seeds
  • ¼ cup whole mustard seeds
  • ¼ cup whole caraway seeds
  • 8 peppers dried red chile peppers
  • 2 heads garlic, separated into cloves and crushed
  • 4 each allspice berries
