Recipe Instructions

Step 1
Preheat the oven to 400 degrees F (200 degrees C). Grease a 13 x 9 x 2-inch baking dish; set aside.
Step 2
Cook sausage, bell pepper, and onion in a medium skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain and transfer to the baking dish.
Step 3
Stir in potatoes, and 1 1/2 cups cheese until well combined.
Step 4
Stir milk, Bisquick, eggs, and pepper together in a bowl until well combined. Pour into baking dish.
Step 5
Bake, uncovered, until a knife inserted in center comes out clean, 40 to 45 minutes. Sprinkle with remaining 1/2 cup cheese. Continue to bake until cheese melts, 1 to 2 minutes more. Cool 5 minutes.
