Killed lettuce simply means tossing fresh leaf lettuce with hot bacon fat and green onions causing the lettuce to wilt, "killing" it. Killed or 'kilt' lettuce is a traditional Appalachian recipe.

Recipe Instructions

Step 1
Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels.
Step 2
Add green onions to bacon grease; cook until reach desired tenderness, stirring often, about 1 minute. Pour onions and bacon grease over lettuce; toss lightly. Crumble bacon; add to lettuce. Serve immediately.

  • 4 green onions, chopped
  • 1 head leaf lettuce - rinsed, dried and torn into bite-size pieces
