Beat maple syrup and margarine together in a large bowl until well mixed and creamy; beat in egg until combined. Combine flours, baking powder, nutmeg, salt, and ginger in a medium bowl; add to maple syrup mixture, alternating with milk, beating briefly after each addition. Divide batter among the prepared muffin cups, filling each about ¾ full.

Bake in the preheated oven until a toothpick inserted into centers comes out clean, 20 to 30 minutes.
