Recipe Instructions

Step 1
Place potatoes in a large pot with enough water to cover. Bring to a boil over medium-high heat. Cook until tender and easily pierced with a fork, about 20 minutes.
Step 2
Meanwhile, place 1 tablespoon oil in a small skillet and heat over medium-high heat. Stir in onion and cook until translucent and lightly brown, about 6 minutes.
Step 3
Drain water from potatoes, and mash. Stir in onion, and continue mashing. Add turmeric, salt, pepper, and cumin. Add remaining 2 tablespoons oil, more to taste, until potatoes are creamy.
