Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease two (7x3-inch) loaf pans.

Stir together flour, sugar, 1 1/2 cups rolled oats, cinnamon, baking powder, and salt in a large bowl. In another bowl, whisk together oil and eggs until well combined; stir into flour mixture until just moistened. Fold in strawberries until incorporated. Pour into the prepared loaf pans. Sprinkle the tops with remaining 1/4 cup rolled oats.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool in the pans for 5 minutes before removing loaves to a wire rack to cool completely.
