Preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil.

Arrange pumpkin halves, cut-sides down, on the prepared baking sheet.

Bake in the preheated oven until flesh is tender throughout, about 40 minutes. Set aside to cool.

Scrape pumpkin flesh into a large bowl; beat in sugar, heavy cream, sour cream, eggs, flour, pumpkin pie spice, and salt until smooth. Divide pumpkin filling between pie crusts.
