Step 1
Place sweet potatoes into a large saucepan and fill with enough water to cover. Simmer over medium-high heat until tender, about 15 minutes. Drain and set aside.

Meanwhile, heat oil in a large skillet over medium-high heat. Cook and stir chicken in hot oil until no longer pink in the center, about 5 minutes. Remove chicken from the skillet onto a plate and set aside.

Stir garlic into the same skillet and cook and stir until fragrant, 1 to 2 minutes. Pour in 3/4 cup water, tamari, honey, and hot sauce. Bring to a simmer, then stir in sweet potato, chicken, mango, and red pepper flakes. Cook and stir until hot.

Dissolve cornstarch in 1 tablespoon warm water in a small bowl; stir into simmering mixture in the skillet and cook until thickened.
