Recipe Instructions

Step 1
Spoon batter into the prepared muffin cups. Sprinkle 1/4 cup Cheddar cheese over batter.
Step 2
Preheat the oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
Step 3
Mix together peaches, basil, and 1 tablespoon brown sugar in a medium bowl until well combined; let sit until sugar dissolves, about 15 minutes.
Step 4
Sift together flour, baking powder, baking soda, and salt in a large bowl. Mix in 1 cup Cheddar cheese until evenly distributed.
Step 5
Beat together butter and remaining 7 tablespoons brown sugar in a large bowl with an electric mixer until smooth and creamy. Add eggs one at a time, mixing well after each addition. Gently fold in peach mixture, then mix in flour mixture a little at time until just combined.
Step 6
Bake in the preheated oven until a toothpick inserted into the middle of a muffin comes out clean, about 25 minutes.

  • 0.5 cup butter, room temperature
  • 0.25 cup shredded extra-sharp Cheddar cheese (such as Sargento® Off the Block)
