Preheat the oven to 350 degrees F (175 degrees C). Place a baking sheet on center rack in the oven.

Combine sugar, flour, and cinnamon in a small bowl; set aside. Cut butter into small pieces; divide into 2 equal piles and set each aside.

Roll out 1 crust to an 11- or 12-inch circle; press into a 9-inch pie plate. Roll out remaining 1 crust for top; set aside.
