• 2 teaspoons olive oil, divided
• 6 beets, peeled and cut into 1/2-inch cubes
• 2 large sweet potatoes, peeled and cut into 1/2-inch cubes

Recipe Instructions

Step 1

Preheat oven to 380 degrees F (193 degrees C).

Step 2

Mix beets and 1 teaspoon olive oil together in a bowl until coated; spread onto a baking sheet.

Step 3

Bake beets in the preheated oven for 15 minutes.

Mix sweet potatoes and remaining 1 teaspoon olive oil together in a bowl until coated.
