Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Melt butter in a skillet over medium heat. Add celery, onion, and 1/2 teaspoon of salt. Continue cooking, stirring occasionally, until onions are soft and brown, about 12 minutes. Stir in carrot, and cook 5 minutes more. Stir in apple, and remove mixture from the heat.
Step 3
Mix ground chicken, egg, 1/3 cup applesauce, milk, bread crumbs, poultry seasoning, sage, 1/2 teaspoon of salt, and black pepper in a bowl. Add cooked carrot-apple mixture and mix until well combined. Form into a loaf. Place in the center of a 9x12-inch baking dish.
Step 4
Mix together the remaining 1/3 cup applesauce, Dijon mustard, and honey in a bowl. Spread glaze over top and sides of meatloaf.
Step 5
Bake in the preheated oven for 30 minutes. Reduce the heat to 375 degrees F (190 degrees C) and continue to cook until the internal temperature is 165 degrees F (74 degrees C), about 30 more minutes. Let loaf rest for 5 minutes before serving.
