Recipe Instructions

Step 1
Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water until tender yet firm to the bite, 8 to 10 minutes. Drain and set aside to cool.
Step 2
Meanwhile, bring a medium pot of water to a boil and cook peas in boiling water for 2 minutes. Drain and set aside to cool.
Step 3
Combine cooled tortellini, cooled peas, tomatoes, Parmesan cheese, chives, and parsley in a large serving bowl.
Step 4
Make dressing: Whisk together olive oil, lemon juice, sugar, salt, and pepper in a small bowl until well combined (dressing will taste sour). Pour over tortellini salad and mix well.
Step 5
Cover and refrigerate for at least 2 hours. Season with salt and pepper before serving.
