Beat sugar and shortening together in a large bowl with an electric mixer until well combined. Mix in egg until incorporated. Add pumpkin and vanilla; mix well. Add flour, baking soda, baking powder, cinnamon, and salt; mix until well combined. Fold in walnuts. Use a small teaspoon or cookie scoop to portion dough onto ungreased baking sheets.
