A Healthy Egg Salad

This healthy egg salad uses low-fat mayonnaise and more egg whites than yolks. I used to buy egg salad at my company's cafeteria. Learning this DIY recipe at home saved me a bunch of money!

Recipe Instructions

Step 1
Peel 8 eggs. Chop eggs (both whites and yolks) and transfer to a medium bowl.
Step 2
Peel remaining 4 eggs; separate whites and yolks. Discard yolks, or reserve for another use. Chop the whites and add to the bowl.
Step 3
Add mayonnaise, chives, Dijon, celery salt, paprika, kosher salt, and pepper. Mix until well combined.

  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon celery salt
  • ¼ cup chopped fresh chives
  • 1 teaspoon Dijon mustard
  • ¼ cup low-fat mayonnaise
  • ½ teaspoon ground paprika
  • 12 large hard-cooked eggs, divided
