Step 1
Layer onion on the bottom of a slow cooker. Season pork with salt and pepper. Place on top of onion. Pour salsa over pork. Sprinkle in cilantro and add peppers.
Step 2
Cook on Low until meat is very tender, about 8 hours. Gently remove pork to a cutting board. Strain and discard about 1/2 of the remaining liquid from the slow cooker, reserving the rest. Discard onions, peppers, and cilantro, if desired.
Step 3
Shred pork with a pair of forks. Mix pork with reserved liquid from the slow cooker, and serve.
