Recipe Instructions

Step 1
Heat oil in a pot over medium-high heat. Saute onions, habanero, and garlic in the hot oil until soft, 5 to 7 minutes. Add cabbage and cook until softened. Stir in chickpeas, carrots, olives, vinegar, lemon juice, Dijon, vegetable seasoning, pepper, and bay leaves.
Step 2
Reduce heat and let simmer until flavors have melded, 1 hour or more.

  • 1 cup pitted green olives
  • 2 large bay leaves
  • 4 medium onions, finely chopped
  • 1 habanero chile, seeded and minced
  • ½ head cabbage, chopped
  • 1 (29 ounce) can chickpeas, rinsed and drained
  • ¼ pound carrots, chopped
  • 3 medium lemons, juiced
  • 1 teaspoon all-purpose vegetable seasoning
