Recipe Instructions
Step 1
Preheat a broiler. Place English muffin halves on a baking sheet. Set aside. Spray a large skillet with cooking spray and set heat to medium-high. Add sausage, onion, bell pepper, and mushrooms. Cook until sausage is crumbled and vegetables are tender, stirring occasionally, about 5 minutes. Drain. Remove from skillet and keep warm.
Step 2
Reduce heat to medium. Add eggs, salt, and pepper. Cook without stirring until edges and bottom begin to set. Gently turn to scramble. Continue cooking until set.
Step 3
Broil English muffin halves until toasted, about 2 minutes. Top halves evenly with sausage mixture, scrambled eggs, and cheese. Broil until cheese melts, about 3 minutes more. Serve immediately.
