Step 1
Preheat an outdoor grill for high heat and lightly oil the grate.
Step 2
Stir chicken and Buffalo wing sauce together.
Step 3
Lightly spray one side of each tortilla with cooking spray. Turn tortillas over and spread a thin layer of blue cheese dressing on the other sides, to within 1/4 inch of the edges. Top with Buffalo chicken mixture and Mexican cheese.
Step 4
Carefully slide tortillas onto the preheated grill. Cook until tortillas are golden brown on the bottom and cheese has melted, 3 to 5 minutes.
Step 5
Carefully transfer tortillas to plates. Add shredded lettuce and celery.
