This colorful pasta salad features a medley of crunchy veggies! Combine pasta with broccoli, cauliflower, carrots, celery, bell peppers, mushrooms and fiery sweet red onions. A sweetened mayonnaise and vinegar binds the salad.

Recipe Instructions

Step 1
Cook pasta according to package directions. Drain and rinse pasta under cold water.
Step 2
Place pasta in a large serving bowl add the all the vegetables and toss to combine.
Step 3
Combine the mayonnaise, vinegar and sugar together, whisk until smooth. Pour over salad and mix well. Season to taste with salt and pepper and serve.

  • 0.25 cup white sugar
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped mushrooms
  • 0.25 cup distilled white vinegar
  • 0.5 cup red bell pepper, chopped
  • 0.5 cup thinly sliced carrots
  • 0.75 cup broccoli florets
  • 0.75 cup cauliflower florets
  • 0.5 cup red onion, sliced
  • 0.75 cup light mayonnaise
