Place peaches and sugar in a blender or food processor and purée until smooth; transfer to a large bowl. Stir in lavender blossoms until incorporated. Let stand at room temperature for 2 hours.

Stir in water and lemon juice until well combined. Place in the refrigerator until cold, about 2 hours.
