Recipe Instructions

Step 1
Preheat the oven to 450 degrees F (230 degrees C). Grease a shallow baking dish.

Combine 1/4 cup olive oil and soup mix in a large resealable plastic bag. Add potatoes; coat well. Transfer to the prepared baking dish.
Step 3
Roast in the preheated oven, uncovered, for 30 minutes. Stir in green beans and portobello mushrooms. Sprinkle in carrots; drizzle with remaining 1 tablespoon olive oil. Roast until potatoes and green beans are tender, about 10 minutes more.
