Recipe Instructions

Step 1
Preheat an outdoor grill for medium heat and lightly oil the grate.
Step 2
Whisk soy sauce, pineapple juice, wine, hot pepper sauce, maraschino cherry juice, brown sugar, honey, lime juice, lemon juice, garlic powder, ginger, black pepper, and cayenne pepper together in a large bowl for the marinade. Toss chicken, mushrooms, bell pepper, and tomtoes in marinade; cover and refrigerate at least 1 hour.
Step 3
On each skewer, thread one chicken piece, three vegetable pieces (mixing and matching as you assemble), another chicken piece, one pineapple chunk, and one maraschino cherry at the end. Cook on the preheated grill until chicken is no longer pink in the center and vegetables are tender, about 10 minutes.

  • 4 skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 1 (8 ounce) package fresh mushrooms, stems removed
  • 3 tablespoons maraschino cherry juice
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon cayenne pepper
  • 0.25 cup dry white wine
  • 0.25 cup pineapple juice
  • 0.75 cup reduced-sodium soy sauce
  • 0.5 pint cherry tomatoes
  • 0.25 cup hot pepper sauce (such as Crystal®)
  • 1 small red onion, cut into chunks
  • 16 wooden skewers, soaked in water
  • 16 fresh pineapple chunks
  • 16 maraschino cherries, stemmed
