Recipe Instructions

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Spray an 11x13-inch baking pan with cooking spray.
Step 2
Heat oil in a skillet over medium heat. Add bell peppers and onion; cook until soft, 5 to 7 minutes. Add spinach and bacon; reduce heat to low and cook until spinach has softened, about 5 minutes. Set aside.
Step 3
Whisk eggs, milk, salt, and pepper together in a large bowl. Mix in pepper Jack cheese and pepper mixture. Pour into the prepared pan.
Step 4
Bake in the preheated oven until eggs are set, 20 to 25 minutes. Remove from the oven and cut into squares.

  • ¼ onion, chopped

  • 1 ½ cups chopped fresh spinach
  • ⅓ red bell pepper, chopped
  • ⅓ green bell pepper, chopped
  • ⅓ orange bell pepper, chopped
  • 4 slices bacon, cooked and crumbled, or to taste
  • ½ cup grated pepper Jack cheese, or more to taste
