Step 1
Place chicken breasts between two sheets of heavy plastic on a solid, level surface. Firmly pound chicken breasts with the smooth side of a meat mallet to about 1/2-inch thickness. Cut flattened breasts into several large pieces.

Place flour, salt, and black pepper into a resealable plastic bag, add chicken pieces. Shake gently until chicken thoroughly coated with flour mixture.

Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch baking dish.
