Recipe Instructions

Step 1
Place chicken breasts between two sheets of heavy plastic on a solid, level surface. Firmly pound chicken breasts with the smooth side of a meat mallet to about 1/2-inch thickness. Cut flattened breasts into several large pieces.
Step 2
Place flour, salt, and black pepper into a resealable plastic bag, add chicken pieces. Shake gently until chicken thoroughly coated with flour mixture.
Step 3
Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch baking dish.
Step 4
Heat olive oil and butter in a large skillet over medium heat. Add chicken; cook until golden brown on each side, about 5 minutes per side. Place in the prepared baking dish, leaving oil and butter in the skillet.
Step 5
Add green onions, mushrooms, and garlic to the hot skillet; cook and stir until mushrooms release their liquid and start to brown, about 10 minutes. Spread mushroom mixture over chicken pieces.
Step 6
Add apple juice, lemon juice, and sugar to the skillet; stir until sugar is dissolved and mixture come to a boil. Pour sauce over chicken and mushroom mixture; cover dish

Bake in the preheated oven until sauce has reduced and chicken has absorbed the sauce, about 1 hour.
