This chicken meatloaf is a delicious version of an old favorite. I make extra because it also makes a great cold sandwich the next day.

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
Step 2
Melt butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 4 minutes. Transfer to a large bowl.
Step 3
Add ground chicken, oats, zucchini, barbecue sauce, egg, salt, chili powder, and cayenne to the bowl and mix until well combined. Shape into a loaf and place in the prepared pan. Mixture will be less firm than a traditional meatloaf; this is normal. Glaze with extra barbeque sauce, if desired.

Bake in preheated oven until an instant-read thermometer inserted in the center reads at least 165 degrees F (74 degrees C), about 1 hour 15 minutes.
