Heat oil in a pan over medium-high heat. Saute ginger, onion, and lemongrass in the hot oil until soft, 5 to 7 minutes. Add chicken and saute until tender and no longer pink in the centers, 5 to 7 minutes. Add coconut meat; cook for 3 minutes. Pour in coconut water and bring to a boil; boil for 2 minutes. Add water, salt, and pepper to taste. Serve.
