Recipe Instructions

Step 1
Mix milk and vinegar together in a shallow bowl. Put cracker crumbs in another shallow bowl. Dip pheasant slices in milk-vinegar mixture. Press both sides in cracker crumbs to coat.
Step 2
Heat oil in a large skillet over medium-high heat. Cook pheasant until golden, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Drain on paper towels and serve.

  • 1 cup canola oil for frying
