Recipe Instructions

Step 1
Preheat the oven to 325 degrees F (165 degrees C).
Step 2
Stir together flour, oats, brown sugar, and cinnamon in a medium bowl until well combined. Pour melted butter over oat mixture and stir until crumbly. Pat 1/2 of the oat mixture into the bottom of a 9x13-inch baking dish.
Step 3
Stir together rhubarb and apples in a large bowl until evenly mixed; pour on top of oat mixture in the baking dish.
Step 4
Stir together cornstarch and 2 tablespoons water in a small bowl until cornstarch is dissolved and mixture is smooth. Set aside.
Step 5
Combine sugar, 1 cup water, and vanilla in a medium saucepan over medium-high heat; bring to a boil, stirring constantly. Pour in cornstarch mixture and continue to boil, stirring constantly, until mixture thickens, 1 to 2 minutes. Drizzle sugar mixture over rhubarb and apples; sprinkle remaining oat mixture over the top.
Step 6
Bake in the preheated oven until hot and bubbly, about 35 minutes.
