Recipe Instructions

Step 1
Preheat a waffle iron according to manufacturer instructions.

Stir together brown rice flour, sorghum flour, dark cocoa powder, baking powder, and cinnamon in a medium bowl until well combined.

Whisk together zucchini, soy milk, beaten eggs, water, oil, and honey in a large bowl; add flour mixture and whisk together until batter is evenly moistened.
Step 4
Grease the preheated waffle iron with cooking spray. Ladle 1 cup batter into the waffle iron, close the lid, and cook until crispy brown, about 5 minutes. Repeat with remaining batter, applying more cooking spray between waffles.
