Step 1
Preheat the oven to 425 degrees F (220 degrees C).

Toss sweet potato chunks, olive oil, salt, and black pepper in a large bowl; spread onto a large rimmed baking sheet.

Roast in the preheated oven until browned and tender, about 40 minutes, stirring after 20 minutes.

Cook bacon in a large skillet over medium heat until crisp and brown, about 10 minutes; transfer to a bowl, leaving grease in the skillet. Add onions to the skillet; cook and stir until browned, about 10 minutes. Reduce heat to low; continue cooking and stirring until onions very soft, brown, and sweet, 10 to 15 minutes more; transfer to bowl with bacon and set aside.

Pour maple syrup and thyme into the hot skillet; bring to a rolling boil. Boil until reduced by half, 3 to 4 minutes. Add roasted sweet potatoes and bacon mixture to the skillet; stir to coat with maple glaze. Transfer to a serving dish.
