My Mom's Sausage & Rice Casserole

This is my favorite sausage rice casserole! It features pork sausage, rice, chicken noodle soup mix, and various vegetables. I grew up loving this casserole, and now I make it for my husband who loves it as much as me, if not more.

Recipe Instructions

Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
In a large skillet over medium-high heat, combine sausage, onion, celery, and bell pepper and sauté for 5 minutes. Drain any excess fat.
Step 3
Stir dry rice in with sausage and vegetables, then add water and soup mix. Transfer mixture to a lightly greased 2-quart casserole dish and top with almonds.
Step 4
Cover and bake in the preheated oven for 90 minutes.

  • 1 (4.5 ounce) package chicken noodle soup mix
