Step 1
The night before roasting, remove giblets and turkey neck; rinse turkey inside and out.
Step 2
Mix water with soy sauce, salt, sugar, sage, celery seed, and thyme in a large stockpot. Stir well until salt is dissolved. Place turkey in the pot, cover with a lid, and refrigerate overnight or at least 8 hours. Remove turkey from brine; rinse well. Follow your regular cooking instructions.
