Recipe Instructions

Step 1
Preheat the oven to 350 degrees F (175 degrees C).

Stir gooseberries and sugar together in a medium bowl. Let stand for 15 minutes. Press one pie crust into the bottom and up the sides of a 9-inch pie plate.

Stir flour and salt together in another medium bowl. Add sour cream, eggs, and vanilla extract. Mix in gooseberry-sugar mixture until well combined. Spoon into pie crust; place second crust over top. Crimp edges to seal; cut some decorative slits in top to vent steam.
