Recipe Instructions

Step 1
Add broth to a small saucepan over medium heat; cook until almost boiling.
Step 2
Put couscous in a large bowl; stir in warm broth and oil. Add tomatoes, red onion, green onions, cucumber, parsley, and lemon juice.
Step 3
Cover the bowl with plastic wrap; let steam for 5 minutes. Uncover and fluff couscous and vegetables with a fork. Season to taste with salt and pepper.

  • 0.25 cup seeded, diced cucumber
