Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.

Cream together brown sugar, white sugar, and shortening in a large bowl. Add eggs, 1 at a time, and beat well after each addition. Stir in grated zucchini and vanilla.

Mix flour, baking powder, cinnamon, baking soda, and salt together in a separate bowl. Add to wet ingredients; stir and scrape the sides of the bowl until all dry ingredients are absorbed. Mix in nuts and dates. Drop tablespoonfuls of dough 2 inches apart onto the prepared baking sheets.
