Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

Stir sour cream, blue cheese, and Worcestershire sauce together in a small bowl. Set aside.

Mix chicken, hot sauce, celery salt, poultry seasoning, paprika, and cayenne pepper together in a bowl until well combined. Form into four 3/4-inch-thick patties.

Cook on the preheated grill until grill marks appear, 6 to 7 minutes. Spray uncooked burger tops with cooking spray. Flip burgers over. Brush cooked side with hot sauce.
