Melt butter in a large skillet over medium-low heat. Add habaneros; cook and stir 5 to 8 minutes. Discard habaneros; stir peaches into butter. Increase heat to medium-high. Cook and stir until peaches begin to sizzle, then stir in brown sugar and cinnamon; cook and stir until peaches are tender and sugar turns into a golden brown glaze, 3 to 5 minutes more.
Step 2
Spoon peaches into individual bowls. Scoop ice cream over peaches; sprinkle with peanut brittle.
