Recipe Instructions

Step 1
Place potatoes on the bottom of a slow cooker. Top potatoes with onion.
Step 2
Remove chicken parts from cavity, if included, and reserve for another use. Pat chicken dry with paper towels. Make 4 deep slits on each side of chicken, and 1 deep slit in each drumstick. Press garlic slivers deep into each slit. Place remaining 2 garlic pieces in cavity.
Step 3
Add salt and pepper to cavity. Generously season outside of chicken with 1 tablespoon rosemary, salt, and pepper. Place chicken breast-side up in the slow cooker. Top with remaining 1 tablespoon rosemary, salt, and pepper.
Step 4
Cook on Low until an instant-read thermometer inserted into the thickest part of the chicken breast reaches at least 165 degrees F (74 degrees C), 8 to 10 hours. Serve with potatoes and onions from the pot.
