Recipe Instructions

Step 1
Place potatoes into a slow cooker; top with onion.
Step 2
Pat chicken dry with paper towels. Make 4 deep slits on each side of chicken and 1 deep slit in each leg. Press 1 garlic half deep into each slit; place remaining 2 garlic halves in cavity.
Step 3
Season cavity with salt and black pepper. Generously season outside chicken with 1 tablespoon rosemary, salt, and black pepper. Place chicken, breast-side up, into the slow cooker. Sprinkle with remaining 1 tablespoon rosemary; season with salt, and black pepper.
Step 4
Cover slow cooker. Cook on Low until an instant-read thermometer inserted into thickest part of the chicken breast, near but not touching bone, reaches at least 165 degrees F (74 degrees C), 8 to 10 hours. Serve chicken with potatoes and onions.
