Recipe Instructions
Step 1
Preheat an outdoor grill for medium heat and lightly oil the grate.
Step 2
Whisk olive oil, lemon zest and juice, rosemary, sage, garlic, and crushed red pepper in a large bowl. Add chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 8 hours to overnight.
Step 3
Remove chicken from marinade and shake off excess. Discard remaining marinade. Season generously with salt and drizzle with olive oil.
Step 4
Cut 2 whole lemons in half; trim tips off ends.
Step 5
Cook chicken, skin side down, on the preheated grill for 3 to 4 minutes: turn 90 degrees to create a crosshatch pattern. Cook another 3 to 4 minutes, turn, and cook until no longer pink in the center and juices run clear, 4 to 5 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
Step 6
Meanwhile, grill lemons, flesh-side down, until caramelized. Flip over and cook, 2 to 3 minutes. Serve with grilled chicken.
