Step 1
Place lentils in a large container and cover with several inches of cool water. Let soak for 4 hours or overnight. Drain and rinse.

Heat oil in a heavy-bottomed saucepan over medium heat. Add onion, chile peppers, garlic, and ginger. Cook until onions are golden brown, about 5 minutes.
Step 3
Stir lentils and 1 cup water into onion-chile mixture. Season with salt. Reduce heat to low and simmer until lentils are mostly cooked, about 30 minutes.
