Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Wash chicken and pat dry. Spread 2 tablespoons butter under the skin and stuff 2 tablespoons in the cavity.
Step 3
Mix chicken seasoning, Dijon, garlic powder, pepper, salt, and onion soup mix together in a small bowl. Rub seasoning all over the surface of the chicken and inside the cavity. Rub remaining 1 tablespoon butter on top of the spices. Place chicken in a baking dish.
Step 4
Bake chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour and 15 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 15-20 minutes before slicing.
